It's that time of year. The weather is cooling and harvest is quickly approaching. What does that look like?
Our winemaking partners, Red Lily Vineyard & Schmidt Family Vineyards will begin analyzing the grapes readiness for harvesting by measuring ph, acidity and sugar levels. We will "stress" the vines for a week by not watering in order to push the vine to work harder and maximize fruit production making it more vibrant, concentrating the flavor, balancing the acids and smoothing the tannins. Once the sugar levels are where they need to be - harvest begins!
